Some cookies start with a recipe.
This one started with a goodbye.
When a good friend was getting ready to leave, a normal farewell cookie just didn’t feel right. So instead, the kitchen rules got tossed aside and the question became: how weird can we make this and still have it be amazing?
Apple. Peanut butter. Butterscotch. Oats. A little warmth, a little crunch, a little chew, and enough personality to make the whole thing sound like it probably shouldn’t work.
Except it absolutely did.
The batch was such a hit that the person it was made for was handed the most important job of all: naming rights. And that’s how Cass’s Apple Peanut Butter Scotchies earned their name.
At least, that’s the official DorkE1 version of the legend.
These cookies are sweet, nutty, buttery, fruity, chewy, crunchy, and just a little bit ridiculous—in exactly the right way. Every bite seems to bring out something different, and somehow all those flavors meet in the middle like they were supposed to be together all along.
A cookie born from a send-off, named by Cass, and kept around because sometimes the weird ideas are the ones worth holding onto.
